Banana Nut Bread
1 cup margarine or butter
2 cups sugar
4 eggs
6 medium or large bananas peeled and mashed
4 cups flour
1 teaspoon baking soda
1 teaspoon salt
1 cup chopped nuts (walnuts or pecans)
I large bowl, combine margarine or butter and sugar. Beat until creamy. Add remaining ingredients. (Mix nuts in small amount of flour before adding) Divide batter into two 9x5-inch loaf pans. (or make half the batter) Bake for 1 hour at 350 degrees. Makes 2 loaves. Freezes well.
Cooking time for muffins is about 25 minutes at same temp.
